If you’ve been around King Cafe or a campus dining hall, you’ve probably seen Chubby Bunny treats, from muffins to pumpkin bars to cookies! These bakery items are perfect for the holiday season and are made special for those with allergies. I had the privilege of interviewing the owner of the company to get an inside look at her mission and motivation for these delicious treats.
Chubby Bunny was founded in 2012 by Allyson Moore. Moore creates bakery items such as cupcakes, cookies, muffins, donuts and full sized cakes, all without milk, eggs, nuts and gluten (all items are vegan friendly!). The company started when Moore discovered that she had multiple food intolerances, so she would spend hours in the grocery store reading labels to find things she could eat. This prompted her to start cooking and baking for herself.
Moore had been baking simple things such as boxed cakes for most of her life, but really took to baking when she discovered all of her food intolerances. Chubby Bunny started when Moore’s mom signed her up for the Oxford Farmer’s Market to sell some of her bakery goods, but it really started to grow when she began selling at Oxford’s Moon Co-Op store and Jungle Jim’s in Fairfield, Ohio.
Last year, Moore expanded the business through developing her own storefront in Hamilton, Ohio. While many of the store’s bakery items change seasonally and week to week, her mainstays include: blueberry muffins, brownies and some sort of pumpkin treat. Some seasonal pumpkin favorites include the pumpkin bar, pumpkin muffin, pumpkin donut and pumpkin-swirl brownie. Moore claims that her pumpkin treats were the main recipe that built the bakery, but she recently has been expanding more into cupcakes.

In addition to Moore's store in Hamilton, Miami students can purchase Chubby Bunny items at Miami's campus markets, Moon Co-op, Kofenya, Scoreboard, and King Cafe. My personal favorites are the confetti cupcakes and the pumpkin bars!
